This guide will walk you through the simple steps to brewing tea with the Bunn machine and single-cup brewing.
There are a total of 6 barrels of tea and 2 cups of loose-leaf tea to make when you have an opening shift.
The barrels of tea are:
Jasmine Green Tea
Black Tea
Signature Milk Tea
Thai Milk Tea
Green Milk Tea
Black Milk Tea
And the loose-leaf teas are:
Oolong Tea
Our fresh teas are Jasmine Green Tea and Black Tea. These have no dairy in them so all you need to prepare and measure are tea leaves and ice. Our milk teas are made with non-dairy creamer powder, so you will need to measure them out in addition to the tea leaves and ice. (See measurement table).
And there are three different brew buttons corresponding to different temperatures on the machine.
Brew A for Green Tea and Green Milk Tea
Brew B for Black Tea and Black Milk Tea
Brew C for Signature and Thai Milk Tea
Below is the measurement table for brewing teas. This table is usually located on the wall by the brewer so you can easily access it when you need to brew more tea.
For teas using Bunn brewer, here are the basic steps:
Place tea in the filter
Click on the correct brew button (see table above)
Let the tea begin brewing
(For milk teas) Add in powder and whisk
Add ice
Pour into the tea barrel
Brew method for fresh teas (Jasmine Green Tea and Black Tea)
On the brewer, press the brew button according to tea type to preheat (Brew A/B)
Note:
Brew A for green tea does not need to be preheated
If you only need to brew half batch, remember to press the “Half” button before the brew begins
Measure ice in a large container
Place premeasured tea leaves into the filter basket
Place the filter basket with the handle side facing away from you into the filter insert
Place the container with ice directly under the filter
When the screen displays change from “HEATING” to “NOW BREWING… TEMP…”, press the same brew button as the button you previously pressed. Tea will begin to brew.
*You can prepare and measure other teas for brewing while waiting for the brew to complete
When the brew is completed, stir the container until the temperature is even throughout.
Pour fresh tea into the barrel accordingly and bring it to the storefront.
Brew method for Milk Teas
On the brewer press the brew button according to the tea to preheat.
Measure the powder needed in one container and the ice needed in a separate container.
Place premeasured tea leaves into the tea filter basket.
Place the filter basket with the handle side facing away from you into the filter insert.
Place an empty container below the filter.
When the screen displays from “HEATING” to “NOW BREWING… TEMP…”, click on the same brew button again. Tea will begin to brew.
When the brew is complete, add in the powder and whisk until the powder is completely dissolved.
Add measured ice, and stir until the temperature is even throughout.
Pour into the barrel accordingly and bring it to the storefront.
Brew method for Oolong Tea
Tea leaves 3 g
Hot water 200 cc
In other words, 200 cc hot water for every 3 g of tea leaves
Into a strainer, measure out loose-leaf tea
Place the strainer on the labeled cup
Pour hot water through the strainer into the cup
Steep for 2.5 minutes
Remove the strainer and dump out tea leaves
In summary, brewing tea with the Bunn machine and single-cup brewing is a straightforward process. The machine has 3 different brew buttons corresponding to different temperatures, and you can use the measurement table to ensure the correct measurements are used. Remember to select the correct brew button, let the tea brew, add powder and whisk for milk teas, add ice, and pour into the tea barrel. How to Cook Brown Sugar Pearls
First things first, let's gather our ingredients. You will need a bag of tapioca pearls, water, a pot, a strainer, and brown sugar. The two tables below are conveniently printed and placed on the walls of the store. Here are the measurements you will use to make the brown sugar pearls.

How to cook brown sugar pearls
Step 1: Boil the water
Fill the pot with water according to the table and bring it to a rolling boil at 1800 degrees F (or the maximum heating temperature).
Step 2: Measure and add the tapioca pearls.
Once the water is boiling, it's time to add the tapioca pearls to the pot and stir gently. Cover the pot and let it boil for 9 minutes. (This is Cycle 1).
Step 3: Continue to boil with lid half-closed
Once the timer is up, open the lid and stir the tapioca pearls. Continue to boil for another 23 minutes. Cover the lid halfway and stir every 5 minutes. (This is Cycle 2).
Step 4: Let pearls sit with the lid closed
After Cycle 2, turn the stove off and stir the pearls gently. Put the lid back on and let it sit for another 23 minutes. (This is Cycle 3).
Step 5: Make brown sugar syrup
During this time, measure out the brown sugar and hot water into a container. Stir until dissolved.
Step 6: Drain and rinse the pearls
After Cycle 3, it's time to drain the pearls in a strainer and rinse them with warm water until it is no longer starchy. This will help stop the cooking process and give the pearls a nice, shiny appearance.
Step 7: Pearls are ready to serve
After rinsing, pour the tapioca pearls into the container with brown sugar syrup and stir so that the pearls are evenly coated. Remember to write the expiration date 4 hours from the completion time.
Step 8: Transfer pearls into pearl warmer
Finally, transfer syrup-coated pearls into the pearl warmer. Remember to write the expiration date on the warmer, and inform the next barista when the pearls expire before leaving your shift.

☕Brewing Coffee Concentrate

Set Up the Pitcher: Place the pitcher on a scale with the brewing chamber on top. Press TARE to reset the scale to zero grams.
Measure Coffee Grounds: Add 220 grams of coffee grounds to the brewing chamber.
Zero Out the Scale: Press TARE again to reset the scale to zero.
Pour Hot Water: Slowly pour hot water (from the steamer or espresso machine) over the grounds, measuring until it reaches 2200 grams.
Press and Drip: Place the filter press gently on top, then cover with the lid. Allow the coffee to drip slowly.
Finish Dripping: Once the coffee stops dripping, remove the brewing chamber from the pitcher and discard the coffee grounds.
Store Properly: Label the pitcher with a "best before" date (7 days from the brew date) and refrigerate at all times.
☕Brewing Coffee Concentrate

Coffee Ground 220 g
Set Up the Brew: Place the coffee filter on a scale. Press TARE to reset the scale to zero grams.
Measure Coffee Grounds: Add 220 grams of coffee grounds to the filter and place the filter into the brewer funnel.
Select the Brew Settings: Select full brew and hit Brew C.
Finish Dripping: Once the coffee stops dripping, remove the brewing funnel from the brewer and discard the coffee grounds and filter.
Store Properly: Label the pitcher with a "best before" date (7 days from the brew date) and refrigerate at all times.
Our Crème Brûlée topping is made by combining the measurements below in a blender and blending with button 1️⃣. This ensures that the blend speed is low to prevent curdling. Press 1️⃣ again after the blending ends approximately 15 times, or until it thickens to a peak. Transfer to the small toppings container until ready for use. Keep refrigerated.

Below are the measurements to make the paste for our Ube Latte Crème Brûlée. The first two rows are the amount needed to coat the inside of the serving cups. Make sure to mix the powder well with cold water to form a spreadable paste to smear around the cup diameter (not to smear upwards).
To prepare for high-volume days, you can also prep the paste according to the last row in a small toppings container. This way, you will be able to scoop the paste and smear it into the cup more efficiently.

The diluted Nutella is used for making Nutella Milk Tea, and Nutella Latte (at some locations serving coffee). After adding the ingredients together, whisk using the ball whisk until it reaches a smooth consistency, and then store them in a container until ready for use.
